Rooibos (pronounced roy-boss) is made from the leaves of Aspalathus Linearis, a shrub indigenous to the Cederberg region of South Africa. Hundreds of years ago it was realised that Rooibos could be processed in a very similar way to tea. The leaves are cut and bruised before being left to dry in the sun. During the drying stage the leaves oxidize, transforming from green into a rust-red colour. This is why in many countries Rooibos is referred to as Red Bush tea.
The quality of a Rooibos can be judged by the ratio of leaves to twigs. The more leaves present makes for a darker infusion, a sign of higher quality. What does Rooibos taste like?
Rooibos has a smooth, honey-like taste, with natural hints of vanilla. The oxidation produces these compelling flavours and creates a well rounded, balanced infusion. It also has a robust, malty character that makes Rooibos equally delicious with or without milk. Due to its strong flavour and dark infusion, Rooibos is a popular caffeine-free alternative to breakfast tea.

How to brew Rooibos
– 10g Rooibos
– 1000ml boiling water
– Brew for 5 minutes before removing the leaves
Cold Brew – for a easy summer drink that is sure to impress
– 10g Rooibos (works with any from our Rooibos selection)
– 1000ml room temperature water
– Brew over night or for around 8 hours in a large teapot/jug
– Strain the leaves and serve over ice. The infusion will keep well in the fridge for around 4 days.
