Organic Matcha Panna Cotta
Panna cotta is a bit of a dream recipe, it’s so easy and delicious, especially when you give it a tea twist. If you’ve read our article ‘How Versatile is Tea?‘ you’ll have discovered that you can infuse lots of different teas into the cream base that makes up recipes like panna cotta, custards, and more. For this recipe, we’ve used our Organic Cocktail Grade Matcha as we think the world always needs more Organic Matcha recipes, but you might also like to try Jasmine Silver Needle, Rose White, Velvet Salted Caramel or even French Lavender Blossoms.

Duration: 15 mins, plus overnight
Serves: 4 – 6
Ingredients
- 237 ml whole milk
- 474 ml heavy cream
- 4 leaves gelatine
- 100 grams caster sugar
- 2 tsp organic cocktail grade matcha – sifted
- 2 tsp vanilla
- Fresh whipped cream
Method
- Lightly grease 4 ramekins and set aside, or use 6 smaller, elegant glasses for lighter portions
- Pour half the milk into a cup and add the gelatine
- Stir and allow to soak
- In a medium saucepan, over medium-low heat, pour the heavy cream, vanilla, sugar and matcha powder and whisk to combine
- Pour in soaked gelatine and cream mixture and stir
- Continue cooking and whisking occasionally until barely simmering
- Remove pan from heat and divide cream mixture among 4 ramekins or the 6 glasses and allow to come to room temperature
- Cover and chill overnight
- Serve with fresh whipped cream or other fancy flourishes such as chocolate soil, or fresh strawberries
