A beautifully light Earl Grey with a twist. Earl Grey is usually made with Indian or Sri Lankan black teas, though these hand-rolled pearls are made from spring leaves grown in Mr Yang’s Yunnan gardens in China. The result is characteristically Yunnanese – light, golden and honeyed with a touch of malt – and the addition of natural bergamot oil. Once unfurled they produce a lighter infusion, fragrant with sweet scent that pairs with citrus, pastries and smoked fish.
