About Honyama Sencha Okumidori

A beautifully balanced expression of the Okumidori cultivar this premium Japanese Sencha green tea is made by Masaaki Mori San, grown in unique conditions in Honyama, Japan in tea gardens shaded by thick, natural mists, and picked in the early spring at first flush when the harvest is more limited, but has a younger taste profile. As a result of slow growth in these cooler conditions and very light steaming, this tea is concentrated with more sweet-tasting amino acids like Theanine and less polyphenols that contribute to a deeper green taste. You’ll discover that the flavour of this tea balances fresh honeydew melon with leafier notes of tomato vine and a subtle umami.

 

About

Shizuoka is renowned for producing exceptional green teas, thanks to its fertile, mountainous terrain and pristine spring water that nourish the tea plants. High-altitude gardens, nestled among dense forests, benefit from excellent biodiversity, creating ideal conditions for tea cultivation. The region's unique environment, with rich volcanic soils and a cooler climate, allows the tea leaves to mature slowly, developing deep flavours and a distinctive quality that makes Shizuoka's green tea highly prized worldwide.

 

Cultivation & Processing

At Masaaki Mori San’s family tea garden, he grows a small handful of different cultivars for making Sencha, and each comes with their own unique expression. Comparatively, the Honyama Sencha Koshun is rich and vegetal, whereas our Honyama Sencha Yabukita is floral with notes of young bamboo, and this Honyama Sencha Okimidori is balanced and fresh. Why not try them all in one sitting to really understand how the nuances of cultivar can influence flavour profiles?
