What is Pu erh Tea?

Pu erh Tea is made from a large leaf Assamica- a variety of the Camellia Sinensis (tea plant), grown in the Yunnan Province of China. Pu erh Tea is substantially oxidised and it is the only tea type that is fermented. Differing to black tea or oolong, much of the oxidation is achieved during fermentation. The fermenting process can either be gradual and slow, to mature the flavour and character (this is known as ‘raw’ pu erh) or the process can be accelerated (known as ‘ripe’ or ‘cooked’ pu erh). How to Make Pu erh Tea

There are both traditional and modern ways to enjoy Pu erh Tea, though both involve ‘rinsing’ the tea leaves before infusion to gently wash and open the tea. Pu erh has only relatively recently become famous outside of China, where it has been enjoyed for hundreds of years.The easiest way to drink Pu erh is to measure the amount you need and to rinse the leaves in a little hot water and then discard the liquid. You can then add the relative amount of water just off the boil and infuse for 2 – 4 minutes, however you prefer. Pu erh Tea can be infused a number of times.
