Directions

  1. To impart the plummy, mineral flavours of Organic Wuyi Oolong tea, simply add 3tbsps of this loose leaf tea to a standard bottle of gin or non alcoholic gin and leave to infuse at room temperature for at least one hour and for no longer than six hours, depending on how you like the flavour. There’s room to play here, though we’d strike a balance at three hours and taste to preference.
  2. Separate the gin from the tea and discard the tea leaves.
  3. Add all ingredients to a mixing glass with plenty of ice and stir with a bar spoon until the outside of the shaker is thick with a layer of condensation.
  4. Strain into a glass with a large ice cube and garnish with a twist of orange peel. Enjoy!

This Organic Wuyi Oolong tea is a beautiful, natural expression of one of China’s most renowned oolong teas. The amber-hued infusion reveals aromas of rich cacao, stone fruits caramelised in brown sugar, and a hint of floral essence, reminiscent of an unopened rosebud. The flavour delivers a deep caramel sweetness, accompanied by the distinct taste of just-ripe plums. There’s a more-ish mineral quality that is iconic to this tea that comes from the rich soils of the Wuyi Mountains, fed by rainfall, waterfalls and the moss that grows on the rocks here.The texture is smooth, with a long-lasting finish and a subtle touch of astringency.
